They are my go to rescue dinner when I have zero time to make anything else. They are my traditional Sunday treat ever since I was a kid. They are the comfort food I give to my kids when they need cheering up. Its save to say we adore pancakes in my house, so much so that when it comes to Shrove Tuesday my husband doesn’t even want pancakes (what?!).
So over the years I’ve tried many recipes and toppings. Not all (most) were healthy. This year I was on a mission to find a recipe that was healthier AND didn’t taste like cardboard. This recipe is gluten free and is healthier than the traditional pancake. If you are not a fan of bananas do not fear, the optional extras will help disguise the taste. Remember to use honey or maple for your topping, unless you want to treat yourself (who doesn’t on pancake day?!) then choose whatever topping you like! This recipe only makes 8 small pancakes, so feel free to double the recipe if you are feeding more than 2 people.
